Smoking Hot Outdoor Appliances and a Celebration of Grilled Meats

Family barbeques should be more thrill than just a grill. Ever grill meat on outdoor appliances that have an integrated wood smoker and herb infusion system? Oh yeah, now we’re talking.

Luxury Outdoor Appliances for the Manly Dream Kitchen

By now you know we are big fans of Alfresco’s LX2 Grills (or as Alfresco refers to them, ‘Open Culinary Systems’), and think they are the cornerstone of high quality outdoor appliances. Home-Tech highly recommends Alfresco’s 36″ model, and we also sell the 30″, 36″, 42″, 56″ Deluxe and  the 56″ Jumbo All Grill. All of the Alfresco models sport a smoking and herb infusion system.

  • A dedicated 5,000 BTU stainless steel burner with cold smoke capabilities.
  • Wood drawer hold large wood chunks, which are better than the wood chips
  • Linear diffusing vents naturally eject smoke at 200 to the food zone
  • The smoker drawer/herb infusion system is heated by the grill, adding humidity and flavor to the grilling environment while the food cooks in moisture.

Culinary Creativity is Possible on Outdoor Appliances

Imagine creating something unique like a smoked lamb roast with rosemary or smoked fish with citrus, all done on your Alfresco grill. Simply by using the herb infusion/wood smoker drawer, old dishes can be made new again. The key to perfectly grilled food is the control and flexibility needed for all kinds of foods and cooking styles. The versatility of these outdoor appliances make it worth the investment. We’ve provided you with a smoky and delicious recipe for ribs for you to try. Remember, put in your favorite type of wood in the smoker drawer as it is the key to these ribs. We hope you enjoy, get messy and enjoy the good times around the grill.

Sweet N’ Smoky Ribs

INGREDIENTS:

  • 3 tablespoons and 1/2 teaspoon salt
  • 3 tablespoons and 1/2 teaspoon white sugar
  • 1 tablespoon and 1-3/4 teaspoon packed brown sugar
  • 1 tablespoon and 1-3/4 teaspoons ground black pepper
  • 1 tablespoon and 1-3/4 teaspoons ground white pepper
  • 1 tablespoon and 1-3/4 teaspoons onion powder
  • 2-1/2 teaspoons garlic powder
  • 2-1/2 teaspoons chili powder
  • 2-1/2 teaspoons paprika
  • 2-1/2 teaspoons ground cumin
  • 8 pounds baby back pork ribs
  • 3/4 cup and 2 teaspoons apple juice
  • 3 tablespoons and 1/2 teaspoon packed brown sugar
  • 3 tablespoons and 1/2 teaspoon barbeque sauce

DIRECTIONS:

1.  Stir together the salt, white sugar, 2 tablespoons brown sugar, black pepper, white pepper, onion powder, garlic powder, chili powder, paprika, and cumin in a small bowl to make the dry rub. Rub the spice mixture into the baby back ribs on all sides. Wrap the ribs well with plastic wrap, and refrigerate at least 30 minutes prior to cooking.

2.  Place the baby back ribs onto the grates of the grill. It is ok if the meat is touching, but to not stack.

3.  Fill the smoker drawer with apple, grape, pear, or cherry chips, and bring the smoker to 270 degrees F (130 degrees C). Smoke for 1 hour.

4.  Stir together the apple juice, 1/4 cup brown sugar, and the barbeque sauce. Brush the ribs with the sauce every 30 to 45 minutes after the first hour. Cook the ribs on the grill until the meat is no longer pink and begins to “shrink” back from the bones, 3 to 4 hours. Brush the sauce onto the ribs one last time 30 minutes before the ribs are ready to be taken out of the smoker.

5.  Once the ribs are done, wrap them tightly with aluminum foil, and allow to rest 10 to 15 minutes. This will allow the juices to reabsorb into the meat and make the ribs moist.
