Sweet N’ Smoky Ribs


  • 3 tablespoons and 1/2 teaspoon salt
  • 3 tablespoons and 1/2 teaspoon white sugar
  • 1 tablespoon and 1-3/4 teaspoon packed brown sugar
  • 1 tablespoon and 1-3/4 teaspoons ground black pepper
  • 1 tablespoon and 1-3/4 teaspoons ground white pepper
  • 1 tablespoon and 1-3/4 teaspoons onion powder
  • 2-1/2 teaspoons garlic powder
  • 2-1/2 teaspoons chili powder
  • 2-1/2 teaspoons paprika
  • 2-1/2 teaspoons ground cumin
  • 8 pounds baby back pork ribs
  • 3/4 cup and 2 teaspoons apple juice
  • 3 tablespoons and 1/2 teaspoon packed brown sugar
  • 3 tablespoons and 1/2 teaspoon barbeque sauce


1.  Stir together the salt, white sugar, 2 tablespoons brown sugar, black pepper, white pepper, onion powder, garlic powder, chili powder, paprika, and cumin in a small bowl to make the dry rub. Rub the spice mixture into the baby back ribs on all sides. Wrap the ribs well with plastic wrap, and refrigerate at least 30 minutes prior to cooking.

2.  Place the baby back ribs onto the grates of the grill. It is ok if the meat is touching, but to not stack.

3.  Fill the smoker drawer with apple, grape, pear, or cherry chips, and bring the smoker to 270 degrees F (130 degrees C). Smoke for 1 hour.

4.  Stir together the apple juice, 1/4 cup brown sugar, and the barbeque sauce. Brush the ribs with the sauce every 30 to 45 minutes after the first hour. Cook the ribs on the grill until the meat is no longer pink and begins to “shrink” back from the bones, 3 to 4 hours. Brush the sauce onto the ribs one last time 30 minutes before the ribs are ready to be taken out of the smoker.

5.  Once the ribs are done, wrap them tightly with aluminum foil, and allow to rest 10 to 15 minutes. This will allow the juices to reabsorb into the meat and make the ribs moist.

Why not add a homemade, grill fired, rotisserie chicken to that list? It’s easy to do, when you have the right appliances for the job, like an Alfresco grill.

Rotisserie Chicken for the Grill


  • 1 whole chickens ( about 3-1/2-pounds or a small turkey)
  • 1 -2 tablespoon oil
  • 1/3 cup melted butter
  • 2 teaspoons white salt ( I use seasoned salt)
  • 1 teaspoon garlic powder
  • 1 tablespoon paprika
  • 1/2 teaspoon fresh coarse ground black pepper ( to taste)


  1. In a small bowl combine melted butter or margarine with oil, 2 teaspoons seasoned salt, garlic powder paprika and black pepper.
  2. Wash the chicken inside and out with cold water, then pat dry using a paper towel.
  3. Lightly salt the inside cavity with seasoned salt or white salt and black pepper.
  4. Tie the legs and wings together securely with cotton butchers twine, then tie string around the body of the chicken in two places.
  5. Set grill to high heat.
  6. Thread the chicken on the rotisserie spit, then place on the rotisserie grill.
  7. Cook chicken for 10 minutes on high heat.
  8. After 10 minutes on high heat REDUCE the grill heat to medium then baste the chicken all over with some of the melted butter mixture (leave some to baste with during cooking time).
  9. Close the lid and cook for 1 to 1-1/2 hours basting occasionally or until the chicken is cooked through and internal temperature reaches 180 degrees F when taken with a meat thermometer.
  10. Cooking time will vary just slightly depending on the size of the chicken.
  11. Remove the chicken from the rotisserie and place on a large plate.
  12. Cover loosely with foil and let stand for about 15 minutes before slicing.
